Official University of the Ryukyus Awamori Goes on Sale
The University’s very own awamori, “University of the Ryukyus Awamori” goes on sale from July 14th 2017.
Using R217 natural yeast from the research laboratory of Professor Hirohide Toyama of the Faculty of Agriculture, the awamori has been produced with the kind cooperation of Biojet Co. Ltd. and Ishikawa Brewery. Through a traditional brewing process that ages the awamori in large ceramic urns (kame-jikomi), each bottle of the University’s original concoction can be purchased at 1,800 yen (500 ml, excludes tax) at the University Co-Operative and Ishikawa Brewery.
Compared to other awamori, University of the Ryukyus awamori carries a higher concentration of multiple aroma components that include fruit and floral notes. It is sweeter on the palette and easy to drink, even for those who are not used to taking awamori.
Students from the Faculty of Agriculture were actively involved in designing the bottle’s label, creating a design based on imagery of basho (Japanese banana) leaves and quill pens.
